JERK CHICKEN TACOS Spicy Peach Salsa

CHICKEN
  1. 1 lb. Chicken Breast
  2. ½ cup Jerk Seasoning
  3. 1 tbsp. Jerk Seasoning, set aside
  4. ½ cup Casillero del Diablo Chardonnay
  5. 1 tbsp. Lime Juice
  6. Spread the Jerk Seasoning on flat plate.
  7. Season the chicken with salt and pepper.
  8. Place chicken in the Jerk Seasoning as only to coat one side.
  9. In a hot pan, add just enough oil to coat the surface.
  10. Place in pan, seasoning side down until browned.
  11. Flip chicken; add ½ cup Casillero del Diablo Chardonnay and cover with lid.
  12. Place in 400-degree oven about 8-10 minutes or until fully cooked through.
  13. Remove chicken from pan and let cool 2 minutes on cutting board.
  14. Using the flat side of a knife, press gently on top of the chicken, smashing it ½ way down
  15. Pull the chicken apart following the natural tear of the meat.
  16. Place in mixing bowl and re-season with Salt, Pepper, pinch Jerk Seasoning, and Lime Juice.
SPICY PEACH SALSA
  1. 1 each Serrano Chili, De-Seeded, Fine Dice
  2. 1 each Red Bell Pepper, Fine Dice
  3. 4 each Ripe Peaches, Medium Dice
  4. ½ bunch Chopped Cilantro
  5. 1 tbsp. Lime juice
  6. ½ tbsp. Honey
  7. Salt and Black Pepper
Instructions
  1. Combine all ingredients in mixing bowl.
  2. Let sit 10 minutes before serving.
  3. Place pulled chicken in soft or crunchy taco shell. Garnish with Spicy Peach Salsa.
  4. Serve with a *Lime Wedge on the side.
  5. Enjoy with Casillero del Diablo Chardonnay!
